In chocolate, but most especially the craft/artisan/bean to bar chocolate world, we see percentages That percentage is often seen as a "bitterness scale", and the higher the percentage, the more bitter and drying the chocolate is. However, this isn't quite right ... Percentage on a bar only tells us how much of its weight or volume is cocoa or cacao This can mean beans, powder, butter, and any combination of chocolate terminology that encompasses those three. (see: liquor, mass, solids, etc) What percentage can also allude to is how sweet or how much sugar is in the bar. This can highlight and mask different notes, so finding the sweet spot in percentage is a big part of how makers highlight flavor notes in various origins Bitterness is all about the genetics and flavor characterisitics of the beans. You can find a bar that is more drying at 60% than some at 85%! That means you should definitely taste around, see what you enjoy most--you might surprise yourself For example, I have previously enjoyed Raaka's 100% Kokoa Kamili Tanzania bar plain, and recently Akesson's 100% Criollo bar While both had flavor notes I love, Raaka had less astringency that I prefer, so that my mouth wasn't too dried. Akesson was a little more astringent than I can comfortably nibble on plain, but paired with something like sliced apple or mango, it makes a delightful symphony on the tongue Try the above pair to compare where your preferences may lie! It's not often you can compare two bars from the same origin and producer, at different percentages. We buy our cacao beans from all over the world to provide you with a culinary experience on how a particular region’s climate, soil, and terrain affect the taste of the chocolate: the terroir (yes, just like in wine tasting!) Let’s look at our Vietnam bar today, thanks to our chocolate ambassador @cacao.crazy Vietnam's rise in popularity can be credited to a researcher from Nong Lam Agricultural University in 2000, Dr. Pham Hong Duc Phuoc! Vietnam's story actually b...egins in the late 19th century when the French brought cacao to the country to secure their supply of the crop Over the decades, it gradually saw a decline after being deemed a failure and barely survived civil unrest and wars. Then, we arrive to Dr. Phuoc's work. His research led him to narrow down 4 types that would do well in the country's climate and soil. He went on to gift thousands of seedlong to farmers and taught them how to care for them When the economic crisis of 2008-2009 hit the world , the prices for cacao dropped to commodity and sent many farmers towards higher paying crops. In 2011, the founders of today's beloved @marouchocolate entered the scene When they discovered the cacao growing there, they experimented and began their work to create locals to create quality fermentary programs to improve the quality that is now getting the country recognized for its often spiced-tasting cacao. Happy New Year! Thanks to all of your support, our business actually grew substantially in 2020 amid the chaos and uncertainty of the pandemic. Here are some highlights from the past year: Grew our customer base both in wholesale and retail/e-commerce, finishing with a record year. Our e-commerce alone grew over 2000%, and our wholesale grew by 60%. Added a monthly chocolate subscription in May. While tourism virtually stopped in April, it has been steadily coming back sin...ce Hawaii reopened in Oct. We are now booking up our farm tours on a weekly basis, but limiting our tours to single contiguous groups. Began hosting virtual corporate chocolate tastings in May and had a great time with companies including COOLA, VMWare, and Hawaii Employers Council. Received a Silver medal (2nd place finish) out of over 400 entries in the Northwest Chocolate Alliance Awards for our Goat Milk bar, made with Hawaii grown cacao beans and organic goat milk. Entered five of our products in the International Chocolate Awards - Americas Bean-to-Bar and Chocolatier Competition (results not yet posted). Created a new Barrel-Aged and Infused Chocolate product line to be released formally in 2021. We infuse roasted nibs with spirits and liquors (such as Rum, Tequila, or Whisky). We then dry them and follow our regular production process. The result is the perfect amount of infusion flavor to complement the chocolate. We will sell individual bars in our online retail store, and you can order your own full barrel (about forty 2oz bars) with custom labels that are perfect for corporate events, weddings, and more (Reply to this email for more info)! Grew our cacao orchard to nearly 1,000 trees, and our oldest trees started producing pods in November. We hope to produce our first estate grown chocolate by summer 2021. Started working with private investors and government programs to expand our production capacity and develop programs to fund planting cacao orchards across the state. Assembled a fantastic management team to help with important things such as increasing overall production, marketing and sales, and legal and finance. See more
