Here is a glorious curtain of vanilla vine growing at King’s Trail Farm in Waipi’o Valley. Vanilla loves to grow up trees, but also thrives on trellises. It takes lots of care and attention to harvest and cure vanilla. Our botanical highlight this month is not quite botanical but definitely a staple in the kitchen, and we love the wild harvest process! We enjoy taking a little side trip every now and then to our favorite secret coastal spots to harvest sea salt. Pockets of sea water evaporate and leave behind the salt on the lava rocks.
